For the salad:
500 grams baby potatoes
500 grams green beans
175 grams canned cannellini beans
250 grams of Roma tomatoes
1 red onion
15 grams of flat parsley
50 grams taggia olives without pits
135 grams fish-free tuna olive oil
For the salad dressing:
4 tablespoons extra virgin olive oil
3 tablespoons of red wine vinegar
2 tablespoons dijon mustard
This is how you prepare this delicious vegan salad
Start by cooking the potatoes. After 15 minutes of cooking, the baby potatoes are ready. Drain and flatten with a spoon.
In the meantime, the dressing can be made. Beat the oil, vinegar and mustard into a smooth dressing. Add salt and pepper if necessary for extra taste. Stir the dressing into the warm potatoes.
Now it's time to clean the green beans. Halve them, but leave the tip. Cook the green beans for 7 minutes until al dente. Rinse them and dry them with a clean tea towel.
