Cashew Ricotta: A Creamy Vegan Cheese

This raw and plant-based dish is wonderfully creamy and airy. You will also be ready for all this deliciousness in no time, because the cashew ricotta is easy and quick to make.

MAKE IT COZY WITH YOUR HOMEMADE RICOTTA CHEESE

The cashew ricotta is an ideal snack to serve to your friends or family. You can do anything with the vegan cheese. For example, combine it with a few other vegan cheeses and make a nice cheese board. Or spread it on a bruschetta. This is also a nice idea for lunch with a salad.

Getting started: what do you need for your vegan cheese?

With your shopping list you will be ready for this vegan cheese dish in no time. You only need a few ingredients. For six people that is:

  • 2 cups of raw cashews

  • ¾ cup of filtered water

  • 1 squeezed lemon

  • 2 cloves of garlic

  • ½ teaspoon of sea salt

  • 6 fresh figs

  • 4 peaches

For the garnish and dressing you can choose from fresh herbs, balsamic vinegar, lemon zest, olives, olive oil and basil.

This is how you prepare vegan ricotta cheese from cashew nuts

  1. Place the cashews in hot water and let them soak for 20 minutes (if you have a very powerful blender, you can start blending the cashews immediately).
  2. Drain the nuts and then rinse them.
  3. Place cashews in blender or food processor.
  4. Mix the cashews with the water, lemon juice, garlic and sea salt until smooth and creamy.
  5. Place the ricotta in a bowl.
  6. Cover it and put it in the fridge for a few hours to stiffen or serve the vegan cheese immediately.

Do you want to store your homemade ricotta cheese? Then you can store these in the refrigerator for five days or freeze them for up to three months.

PRESENT YOUR PLANT-BASED CHEESE AS YOU WANT

Are you going to serve up your homemade ricotta cheese? Then cut the fresh figs and peaches into quarters. Spoon the ricotta over a bruschetta or serve it on a cheese board.
