For the salad

  • generous handful of baby spinach (if you have small hands, use a little more)
  • avocado

  • 150 grams sweet potato

  • 150 grams of tofu

  • half a cup of shredded cabbage and carrot

  • handful of roasted cashews

  • chili (optional)

For the salad dressing

  • quarter cup olive oil (extra virgin)
  • juice of half a lemon

  • tablespoon of apple cider vinegar

For the peanut sauce

  • half a cup of peanut butter
  • tablespoon coconut aminos or tamari

  • lime juice

  • chili flakes (optional)

This is how you prepare the late summer vegan salad

First cut the sweet potato and tofu into cubes. Roast them in a pan or use the airfryer until crispy. Then let the cubes cool down.


Mix the ingredients for the dressing together. Do the same for the peanut sauce.


Then scoop the cubes into a bowl. Garnish with the baby spinach. Slice the avocado and place it in the bowl as well. Add the shredded cabbage and carrot, as well as the cashew nuts. Do you also want chili? Then cut a few slices and put them on the salad.
