Chia Pudding With Homemade Coconut Yogurt

2 pitted dates
2 handfuls of spinach
400 ml coconut yogurt
100 ml vegetable milk
250 grams of chia seeds
Pinch of salt

This is how you prepare this delicious breakfast
Soften the dates by placing them in a bowl of hot water. Then remove them from the water and put them in a high-powered blender. Add the coconut yogurt, vegetable milk and spinach and mix with the dates. In a large bowl, add the mixture, chia seeds and a pinch of salt and refrigerate for at least 15 minutes. Then garnish it with the toppings and enjoy this exciting and nutritious mix of ingredients.
Making yogurt yourself: what you need
To really go all the way with the chia pudding, you can make the coconut yogurt yourself. But how do you make this yogurt yourself? That's not that hard either, thankfully. All you need is a good yogurt maker, probiotics (living micro-organisms that have a positive effect on health), coconut milk with as few additives as possible, 1 tbsp coconut blossom sugar and 1 tsp agar powder.
How do I make yogurt myself?
First of all, make sure that the pots are very clean. Wash them with hot water and dry them in the oven. Heat the coconut milk with the sugar until the sugar has dissolved. Note: it does not need to boil. Throw the agar into the hot water and wait for the coconut milk to cool down to 50 degrees. Now stir the contents of the probiotics capsules into the coconut milk. Pour the entire mixture into the yogurt maker and let it stand for 8, 16 or 24 hours (depending on the desired acidity of the yogurt). Then divide the homemade yogurt over the glass jars and put them in the freezer for half an hour. Then store the yogurt in the refrigerator and consume within 3 days.
