Kale salad with blood orange and pecans
This salad is a special (tasty) combination of raw ingredients. Quick and easy to make and delicious to eat.
Kale salad is really one of those dishes that can't go wrong. You can experiment to your heart's content with different dressings and nuts, all combinations will taste great. We ourselves are very enthusiastic about this 'slim' and nutritious raw kale salad to which fresh blood oranges and crunchy pecans have been added.
Ingredients:
200 grams finely chopped kale
1 blood orange, peeled and divided into wedges
1 ripe avocado, sliced
a handful of pomegranate seeds
a handful of olives
Dressing:
2 cloves garlic, crushed or minced
2 tbsp. extra virgin olive oil
2 tbsp. lemon juice
a handful of raw pecans or pine nuts or walnuts
Preparation:
1. Place the nuts in a large salad bowl. Add the kale, avocado and garlic. Optionally, you can add a finely chopped onion. Did you mix all these ingredients together? Then you drizzle the salad with the dressing of olive oil and lemon juice.
2. You make the dressing by beating the olive oil with the lemon juice. After the dressing, add the pieces of blood orange to taste. Break up the orange slices to make them easier to eat.
3. The salad is served cold, so put the salad back in the fridge after preparation until it's time to eat.
